Homemade Summertime Ginger Ale

What you will need:

1 pound fresh organic ginger, unpeeled and chopped

2 stalks organic  lemongrass, trimmed and chopped
2 small organic fresh chiles, stems removed
1 1/2 cups sugar
organic sliced limes

Soda water

*Organic is optional*

Combine the ginger, lemongrass and chiles in food processor and process until minced, stopping the machine periodically and scraping down the sides. Place the puree in a saucepan with the sugar and  four cups of water. Bring to a boil over high heat, then reduce to medium and simmer for 15 minutes.
Turn off the heat. Cool, then strain into a glass measuring cup, let chill.Once chilled, pour a 1/4 cup of the syrup in a glass full of ice, get the soda water and fill to the top. Add more syrup to taste if needed. Grab your lime wedges and slightly squeeze some juice into your ginger ale, mix and drink!
