Homemade Vegan Mayo with Lime

  • Clean empty jar with lid
  • cup  coconut milk
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon sea salt 
  • 2 -2 1/2 teaspoons apple cider vinegar,
  •   1 teaspoon fresh squeezed lemon juice , 1 teaspoon of fresh squeezed lime juice
  • 1/2 teaspoon Dijon mustard
  • 2 1/4 cups safflower oil
  • Combine all ingredients except vinegar and lemon/lime juice in blender, blending until smooth. Slowly add vinegar and lemon/lime juice until liquid thickens. Blend again. Spoon out mayo into jar, use a rubber spatula to remove the excess from blender. Enjoy!
